Recipe of the Week // Salmon

I visited Trader Joe’s for the first time this weekend. Whole Foods seems to dominate the south, so I was very excited when Alex suggested it. I’ve been craving fish lately so we bought two salmon fillets for dinner. Here’s an easy and inexpensive recipe! I was done in about 45 minutes.

Ingredients: 2 salmon fillets (scales still on), lemon, butter, basil, thyme, salt, pepper, 1 pound of green beans, 2 carrots, 1/4 box of vermicelli pasta

Preheat the oven to 400 F. To prep the salmon, rub in lemon and butter. Use 2 tablespoons of butter and place evenly over the salmon. Cut up one lemon and squeeze over the butter. Sprinkle with thyme and basil for flavor. Add salt and pepper. Bake in the oven for about 20-25 minutes. When the salmon is done, it should peel straight off the scales. While the salmon is baking, toss the pasta into boiling water. When pasta is plump, drain and add sauce. I, personally, just like a little butter and plenty of black pepper. I like to steam the green beans for about 10 minutes and eat the carrots the way they are, just cleaned and chopped up. Some people like to bake them in butter which is good too :] Throw them in the oven for 10-15 minutes and voila! Ready to serve.
